You are not required to create rate periods when adding your suppliers whose rates fluctuates all the time.

If your supplier's pricing is dynamic you can set the price of a service at an itinerary level instead (on the Pricing page).

Services with no rate periods will appear on the Pricing page with no value, but you add/amend the price of any item by selecting the options button (three dots) followed by 'Edit pricing'. You can then choose to calculation method and enter the price of the service as well as your mark-up or commission.

Note: while rate periods are not required, you must create a Product and Option to add a service to an itinerary.
